Introduction

Very yummy "breakfast cookies." Very yummy "breakfast cookies."
Number of Servings: 60

Ingredients

    1 1/4 cups unbleaches all-purpose flour
    1 tsp baking soda
    1/4 teaspoon salt
    1 teaspoon ground cinnamon
    6 tbs unsalted, room temp. butter
    1/2 cup sugar
    1/2 cup brown sugar
    1 large egg
    1 teaspoon vanilla extract
    1 cup oatmeal (not quick-cooking)
    2 cups semisweet chocolate chips
    2 bananas, cut into 1/4 to 1/3 inch pieces

Directions

Mix flour, baking soda, salt & cinnamon together. Set aside. Mix the butter and sugars together until yummy & fluffy. Add egg & vanilla until well mixed. Add oatmeal, chips & bananas. Mix until your arm feels like it's going to fall off.
Drop by your typical rounded spoonful onto a greased cookie sheet. Bake for about 18 minutes at 350.

    I just made this recipe and they are really good. I added a couple of tablespoons of peanut butter and only had quick cooking oats and they came out great!! Kids loved them. - 2/17/14

    I made this recipe but used an ice cream scoop rather than a rounded spoonful, which made 15 large cookies. Only had to bake them for 15 minutes, rather than recommended 18. Cookies got high marks from my family, next time will double recipe. - 8/30/09
