Crust: 1 1/2 cups flour; 1/2 cup powdered sugar; 1/2 cup butter (melted)
Filling: 3 lemons, 1 cup sugar; 2 eggs, 2 egg whites; 2 tablespoons flour; 1/4 teaspoon salt; 2 teaspoons powdered sugar
2. For filling, zest two of the lemons to get 2 teaspoons of zest, cut finely. Juice lemons to measure 1/2 cup juice. In small mixing bowl, combine lemon zest, juice and granulated sugar; whisk. Add eggs, egg whites, flour and salt to mixing bowl; whisk until blended.
3. Pour filling over crust, spreading evenly. Bake 20 minutes or until filling is set. Remove from oven to colling rack. Cool completely. Sprinkle with powdered sugar. Cut in to bars. Makes 16 bars.
