Ingredients

Crust:
1 1/2 cups flour
1/2 cup powdered sugar
1/2 cup butter (melted)
Filling:
3 lemons
1 cup sugar
2 eggs
2 egg whites
2 tablespoons flour
1/4 teaspoon salt
2 teaspoons powdered sugar
Directions
1. Preheat over to 350. Spray a 9x9 pan with cooking spray. For crust, combine flour and powdered sugar in mixing bowl. Add butter; blend until mixture resembles coarse crumbs. Press mixture onto bottom of baking dish. Bake for 17 minutes; remove from oven to cool.
2. For filling, zest two of the lemons to get 2 teaspoons of zest, cut finely. Juice lemons to measure 1/2 cup juice. In small mixing bowl, combine lemon zest, juice and granulated sugar; whisk. Add eggs, egg whites, flour and salt to mixing bowl; whisk until blended.
3. Pour filling over crust, spreading evenly. Bake 20 minutes or until filling is set. Remove from oven to cooling rack. Cool completely. Sprinkle with powdered sugar. Cut in to bars. Makes 16 bars.
