Introduction

This casserole is very good for everyone, but especially for diabetics. There is no bread or milk. There is no setting over night. This casserole is very good for everyone, but especially for diabetics. There is no bread or milk. There is no setting over night.
Number of Servings: 12

Ingredients

    1 pound Tennessee Pride Sausage Extra Mild, browned
    12 large eggs
    2 c shredded Cheddar cheese
    1/2 t salt
    1/4 t pepper

Directions

Preheat oven to 375*F.
Mix all ingredients together. Spray a 12 cup muffin pan and pour egg mixture into each muffin cup evenly. Bake for 30 minutes. Cool for 5 minutes and serve.

    I baked it in a 9x13 sq. glass baking pan add jalapenos to the mixture before baking and toped with guacamole, salsa and sour cream. Also can add onions, mushrooms! - 5/18/12

    Added 1/3 cup of Bisquick batter ans spooned it evenly over each uncooked cup to add 17 calories per muffin and a little top crust. Very nice - hope it freezes well for future breakfasts. - 11/14/10

  • Yum! I also like to add veggies (because I add veggies to everything). Last time I chopped a bag of frozen mixed veggies extra fine and added to the mix- it did not mess with the consistency at all. So handy to keep in the freezer and are just as tasty reheated in the toaster oven as fresh. - 12/3/11
