Carrots, raw, 5 medium
Zucchini, 2 cup, sliced
Raisins, 1 cup, packed
Coconut, sweetened, 1 cup
Pecans, 1 cup, chopped
Apples, fresh, 2 medium
Dole Pineapple Tidbits 100% Pineapple juice, 1 cup
Applesauce, unsweetened, 0.5 cup
Egg substitute, liquid (Egg Beaters), 1.5 cup
Buttermilk, lowfat, 1 cup
Flour, white, 1.5 cup
Wheat flour, white, bread, enriched, 2 cup
Oats, 1 cup
Granulated Sugar, 1.75 cup
Add flours, oats, spices, vanilla, salt and soda.
Stir just to combine.
Bake in muffin tins 15 minutes or until springs back to the touch
