Introduction

These hearty breakfast muffins are bursting with fiber-rich fruits and veggies (yup, you heard that right要eggies)! These will keep you full all morning without weighing you down. These hearty breakfast muffins are bursting with fiber-rich fruits and veggies (yup, you heard that right要eggies)! These will keep you full all morning without weighing you down.
Number of Servings: 34

Ingredients

    5 medium carrots
    2 cups sliced zucchini
    1 cup raisins, packed
    1 cup sweetened coconut
    1 cup chopped pecans
    2 medium apples
    1 cup Dole Pineapple Tidbits
    .5 cup unsweetened applesauce
    1.5 cups liquid Egg substitute
    1 cup low-fat Buttermilk
    1.5 cups white flour
    2 cups wheat flour
    1 cup oats
    1.75 cups granulated sugar

Directions

Shred all veggies and combine with sugar, buttermilk and egg substitute.

Add flours, oats, spices, vanilla, salt and soda.

Stir just to combine.

Bake in muffin tins 15 minutes or until springs back to the touch
