This sweet and sour dish is so perfect with chappati, Naan or even rice as a side dish. Ingredients

Garlic, 3 cloves , pressed
Onions, raw, 1.5 cup, chopped
*Coriander ground, .5 tsp
*Cumin ground, .25 tsp
Chili powder,.4 tsp.
Ginger root, shredded .5tsp
Spinach, fresh, 1 package (10 oz) rinsed well and cut.
Mushrooms, fresh, 18 large. cleaned and sliced.
Red Ripe Tomatoes, 3 plum tomatoes, chopped ( I used peeled, whole tomatoes with a bit of juice without any added salt)
*Philadelphia fat free or Light cream cheese, 2 ozs.
Garam Masala, .5 tsp
Kosher salt, 0.25 tsp
Olive Oil, 2 tbsp
Directions
Brown pressed garlic in Olive oil, drop chopped onion and fry till brown ( you can reduce Olive oil to 1 tbsp if you opt not to brown the onion - which will make the dish sweeter). Add coriander and cumin powders and paprika or chili powder depending upon how spicy you like the dish to be.
Stir in the shredded ginger and fry. Drop the chopped plum tomatoes, cream cheese and stir well, cooking for 2 minutes. Drop the sliced mushrooms, chopped spinach and cook for another 10 minutes or until spimach is tender. Stir in the garam masala for garnish. Serve with rice or Indian flat bread. Yum!
Add grilled chicken breast strip with spinach and mushrooms so it absorbs the flavor and seasoning too. This can also be prepared as a wrap to be served immediately.
