Ingredients

1 pound 96% lean ground beef
1 cup uncooked whole wheat elbow macaroni
1 (14.5 oz) can diced tomatoes, with juice
2 (8 oz.) can no salt added tomato sauce
3 cups shredded cheese, divided (I use the Great Value Fiesta blend)
1 t garlic powder
1 t onion powder
1/4 t salt
1/8 t pepper
Directions
Preheat oven to 350 degrees. Put water on to boil pasta. Brown ground beef, and to it add tomato sauce, diced tomatoes and seasonings. Cover this and allow to simmer while pasta is cooking. Drain pasta and add to meat mixture. Blend well. Spread half of the pasta/meat mixture into the bottom of a 13"x9" glass casserole dish. Cover this with 1.5 cups of shredded cheese. Spread the remaining meat/pasta mixture on top of this and top with remaining 1.5 cups of cheese. Bake at 350 degrees for 45 minutes or until cheese on top is golden brown and a little bit crispy. Makes 8 servings.
Notes: You can also saute some chopped onion and fresh garlic in with the meat, but the above seasonings work in a hurry. Adding in some frozen veggies (corn) is good, too. Also, use no sodium added diced tomatoes for even less sodium, and adjust cheese and seasoning amounts to meet your needs or suit your tastebuds.
