Chef Meg's Roasted Chicken with Herb Oil (8:20)

Roasted chicken is a simple and versatile protein. Use it in soups, throw it on pasta or pair it with a simple salad. Tip: Save time and energy by roasting two chickens at once and freezing one (carve it first).

I am so glad you did this video- I bake chicken and do not like pre baked chicken because I love the flavor and smell of a freshly backed chicken- the two chicken idea is great. I have not basted chicken before- but I'm going to try this recipe.

Thanks for the empahsis on handwashing. Sharon

Why not cut off the wing tips to make broth? I don't think anyone eats them.
Your roasting pan does make a difference. In my kitchen, whole chickens always go in "the old blue enamel" roaster.

A way to make it very moist is to rub oil, (olvie or cannola) on the outside of the chicken. I have made it on the grill with a soda can with water and it just comes out very jucy.

It was hard to believe that a SparkPeople recipe would start with butter. If you've cleaned a chicken before you know there's sooooo much fat under the skin.
Just rub your favorite spices on the outside of the skin, turn the bird on the breast side, cover the pan in foil and bake on high for 1 hr,
