Egg, fresh, 2 medium (remove)Baked Potato (baked potatoes), 0.5 potato (2-1/3" x 4-3/4") (remove)Mushrooms, fresh, 0.5 cup, whole (remove)Peppers, sweet, red, raw, sliced, 0.5 cup (remove)Red Ripe Tomatoes, 1 Italian tomato (remove)Garlic, 1 clove (remove)Olive Oil, 2 1tsp (remove)Onions, raw, 0.5 slice, medium (1/8" thick) (remove)
Chop all the vegtables and then toss them in the olive oil. Bake in the oven for about 10 mins until sticky and soft.
When the vegtables are ready get a non stick pan and add the vegtables to the pan and the cooked baked potato. stir around and then add the beaten eggs. let the bottom cook and then put under a grill until the top is golden and firm.
Serve with a salad
