Chicken with Apricot Sauce

Ingredients
16 oz boneless chicken breats, cut into approximately 2-in strips1 tbsp olive oil2 tsp garlic, minced or crushed1 tsp grated ginger root1/4 cup orange juice2 oz white wine1-2 tsp soy sauce1 tbsp apricot or other fruit jam
Directions
In a 10-12 inch non-stick frying pan, saute' the chicken strips in olive oil, garlic and ginger until cooked through and lightly browned.
Move chicken to a platter.
To the pan juices, add the remaining ingredients. Turn up the heat/flame until the sauce has reduced.
Add the chicken back to heat through and serve with rice, couscous or other grain.

    My boyfriend and I were watching Rachel Ray make apricot chicken, and we decided to try a healthy version of it instead. This recipe was great. I replaced the white wine with balsamic vinegar (that's what Rachel Ray used), and it turned out amazing! - 12/10/07

    This really didn't have a lot of flavor in our opinion. It may be because we are used to Thai food and this dish just didn't measure up. I like that the dish is so low in fat and calories, but I really had to doctor it up so that it had some flavor. - 4/15/08

    Great! I only used 2 chicken breasts, but still used the same amounts for everything else...it gave it some extra sauce and was fantastic with brown rice! Oh, and I used balsamic vinegar instead of the white wine. - 4/14/09

    I made this for dinner tonight! We loved it. I did double the sauce ingredients based on other responses and it was just enough. I also used reduced sugar apricot jam. I served this over brown rice and a side of green beans. Thanks for the recipe! - 3/18/09

    Made this recipe last night for dinner with a few minor adjustments. I didn't have fresh ginger root so to the sauce I added a very slight amount of crystallized ginger root I had on hand, 1 Tbsp of butter and a slight shake of crushed red pepper flakes.     This was incredible! I served with quinoa and fresh steamed spinach - what a hit! The glaze (not really a sauce) is just slightly sweet and Asian-inspired. Make sure to really brown the sliced chicken, the flavor compliments beautifully - this is a MUST TRY!! - 4/25/07
