Grits with eggs and spinach

Ingredients
1 packet of plain instant grits1 egg white1 whole egg1 handful of spinach1 tsp chopped garlic1 tbs waterCooking spray1 tbs shredded cheese Salt and pepper
Directions
Makes 1 single serving

1. Prepare grits as directed on the package.

2. Add garlic, water and spinach in sautee pan and cook on medium high heat until tender and wilted.

3. Spray cooking spray in non-stick pan over medium heat. Beat egg and egg white together in a bowl, then pour into nonstick pan. Scramble eggs.

4. Mix grits, spinach and eggs together. Add salt and pepper to taste.

5. Sprinkle with shredded cheese.

    Easy and quick with Quaker instant grits packs. I love recipe as written and also have done a layered version with left overs had on hand. Grits with a laughing cow wedge and spinach, a few tabs of left over marinara sauce topped that and fried egg on top. - 10/28/19

    I changed this up just a tad.
    I added just a smidge of chopped fresh tomato after the spinach was cooked, and stirred together.
    Used shredded mozzarella cheese. Shredded it over grit mixture and stirred just to melt a bit.
    I made the eggs over medium, put them on top of the grits! YUM!

    I love grits, I love spinach. Unable to locate my casserole recipe, I used this for my morning breakfast. Omitted the salt since instant grits are high in sodium. No shredded cheese; used mozzarella stick. A definite keeper! - 7/2/14
