Apple and Cottage Cheese Bake

6 oz. chopped apples1/2 cup 2% cottage cheese2 eggs, beaten1 cup cooked steel cut oats1/4 tsp. cinnamon1/4 tsp. nutmegSweetener (optional)
Preheat oven to 350 degrees.
Mixed beaten eggs with cottage cheese, apples and oats. Put mixture in a small pie plate sprayed with cooking spray. Sprinkle cinnamon & nutmeg on top. Place in oven and bake for 30 minutes or until done.

This was really interesting combination. I used about half real eggs, and used egg substitute for the other half. Then I used Splenda brown sugar substitue for sweetener. Next time I'd mix the sweetener and seasonings in rather than putting them on top. I also doubled it and considered it 4 servings - 7/2/09

I loved this! I made a half portion (1 egg, 1/4 c. fat free cottage cheese, 1/4 cup quick cook oats, 1/2 pear). I also cooked part of the oats and stirred them in, but left part of the oats uncooked, stirred with vanilla, cinnamon, and a little margarine, and made a crumbly topping. Tasty!! - 9/21/07

This was great! Added 1tsp vanilla and 3tsp sugar to a double batch- got 5 servings out of it! Served with a 1TB maple syrup. I was really surprised at how delicious this is! Apples could be subbed for pears, plums, whatever is seasonal. The recipe came together fast and was really easy. A winner! - 1/18/12
