Whole Wheat Crockpot Lasagna

- 8 whole wheat lasagna noodles, uncooked.- 1-2 lb extra lean ground beef or turkey (I use 2 but I have a big crockpot and like it meaty!)- 1 tsp italian seasoning- 28oz jar low fat/low sugar spaghetti sauce- 1/3 cup water- 4oz can sliced mushrooms (rinsed and drained)- 15oz fat free ricotta cheese- 2 cups shredded skim milk mozzarella cheese
1) Spray inside of cockpot with no-calorie cooking spray.
2) Cover bottom of crockpot using 4 noodles (break to fit)
3) Brown ground beef in pan. Drain. Stir in Italian seasoning. Spread half of it over noodles in crockpot.
4) Layer 1/2 of sauce, 1/2 of mushrooms, 1/2 of ricotta and 1/2 of mozza over beef. Repeat layers.
5) Cover and cook on low for 5 hours.
Makes 8 small servings or 6 large.

Not real tasty. We may have possibly over-cooked it. We don't plan on making it again. Our crock pot doesn't have a setting for cooking on low for 5 hours. We ended up cooking it on high for 5 hours. We are still new to crock pot cooking. - 8/4/08

yeah you must have overcooked it....low and high are completely different...
If you only have high I would suggest checking it after 2 1/2 to 3 hrs.

I tried this a couple of days ago, but I changed it up a little. Since I had ground deer meat I used a pound of that and instead of only 4ounce can of mushrooms I used 2 4ounces cans, I really love mushrooms and I also added a tsp of Greek Seasoning to go with the Italian seasoning. This was wonderful! Rather than go for a 2nd lb of meat, I added in 3-4 handsful of chopped fresh kale to the browning meat . . . it added volume to the meat layers, plus all the green fiber and nutrients. Spinach would work, too. I also used fresh chopped mushrooms rather than canned. YUM. - 6/25/10

I have a regular crockpot on the larger side and it probably ends up 2/3 full so a bit smaller one would just be thicker :)
