Ingredients
3/4 cup dry lentils 3/4 cup dry brown rice 4 cups water 4 chicken or vegetable bouillon cubes2 teaspoons chili powder 1/2 teaspoon cumin 1 teaspoon onion powder 1/4 teaspoon garlic powder 1 Tbsp olive oil
Directions
In a 2-quart saucepan bring the water to a boil. As the water is heating, add the oil, lentils, rice, bouillon, chili powder, cumin, onion powder, and garlic powder. Bring the whole thing to a nice fat boil. Reduce the heat to low. Place a lid on the lentils and allow the mixture to simmer for about 45 to 50 minutes. The water should be mostly absorbed. You may serve this as is, or topped with a little cheddar cheese if desired.

* If you are having a busy day and don't have time to cook this on the stove, it can cook in the crock pot on low for about 6 to 8 hours or high for 3 hours instead.

Really good and simply! My only suggestion would be to hold off on putting the cumin, onion powder and garlic in. Letting the spices simmer for almost an hour dulls their flavors. If you put them in right before the rice and lentils are done, their flavors are at their peak! - 3/15/10

Really delicious. Even my son (6) ate 2. I did tweak it up. Filled Tortillas with mix , added some shredded cheddar, rolled them up, placed them in a casserole dish, poured Enchilada sauce over the top and sprinkled some more cheese, covered with foil and baked it for about 30 minutes. Yummy. - 7/19/10

This isn't really vegetarian if you use beef boulin cubes. - 4/7/10

This was excellent. I used taco seasoning instead of chilli powder with the same measurement. Even the carnivores were asking for 2nds and 3rds. Good job and thanks for the recipe. - 10/12/09

I've never had a lentil in my life, so decided to try this recipe--it was wonderful! My family really enjoyed it. I served it on a whole-wheat tortilla, with low-fat cheddar cheese, fat-free sour cream and salsa. Delicious!! I will certainly try more of your lentil recipes. - 2/25/09

Aren't lentils good?! I'm so glad you enjoyed the recipe. I too, had never had a lentil until a couple of years ago when I decided to find low cost recipes for my family budget. Lentils are extremely cheap, easy to cook with, healthy and delicious!

Needed a quick meal with ingredients on hand. I love lentils. Will serve in a whole wheat tortilla with lettuce, red pepper, cucumber, green onion and salsa. Maybe some cheese. - 11/9/17

Very good. I added chopped onion and green pepper which were sauteed before adding the stock, rice and lentils. I also used taco seasoning mix plus garlic and onion powders instead of the cumin and chili powders. Easy meat free meal. - 5/19/13

SO GOOD! I did like some of the suggestions said and didn't add the garlic and onion powder until the very end. This will be a regular in the rotation. - 8/21/12

TVP is textured vegetable protein, a/k/a textured soy protein. I'll be making this for a Church Supper that is involving the community in helping to work with all income levels in a shared project. To answer a - 5/9/12

This is delicious. I used white rice (not brown) but cooked faster than lentils. I will try making it in the crockpot next time, then I think I will freeze it for quick dinner ideas.

Any suggestions as to what to use instead of the beef bouillon cube? I've never seen a beef bouillon cube used in a vegetarian dish. - 12/27/11

Very tasty! My first introduction to TVP, although we eat lentils frequently. Although the portion appears huge for one serving, I really appreciate that the recipe is for one as sometimes I am the only one in the house eating Sparkfood and get tired of eating the same thing 8 times in four days! - 9/8/11

I have made this recipe several times since finding it a few weeks ago. I had never used tvp before, but this made me a convert! You do not miss the meat at all. This dish is very flavorful and filling. - 7/26/11

I used hamburger instead of tvp and added some red and green peppers too. - 7/12/11

This was awesome! I doubled the spices and added hot pepper flakes for a little added kick, the only trouble was I forgot the oil and I think that's why it cooked to the pan a little. I will definitely make this again! - 6/10/11
