Vegan Sloppy Joes

1 cup sweet onion, chopped1 red bell pepper, chopped1 cup mushrooms, sliced and chopped3 cloves garlic, minced or chopped2 tbsp olive oil1 10 oz package frozen spinach(the chopped kind)1 can tomato paste (6oz)6 tbsp of A1 Steak Sauce (yes, it is vegan!)1 tbsp dried parsley(or fresh if you like)a bit of fresh ground pepper if you like1 package Morning Star Farms Grillers Recipe Crumbles meal starter (1 package yeilds 6 2/3 cup servings)WARNING!!!! These are no longer vegan!!! as a comment down below states. I have not tried the boca ones that are mentioned. Bob's Red Mill has a TVP that is vegan though. I am adjusting the ingredients to reflect this change. I appologize for the Morning Star Farms switch. how ridiculous that they've changed their recipe...please feel free to add/change spices as needed. sometimes we put mustard in, or horseradish, etc...
FIRST: take out spinach and set on counter to thaw (or run tap water over the package for a bit) while preparing the rest of the veggies.
SECOND: rehydrate the TVP per package instructions.
Heat olive oil over medium heat and sautee the onions first, until soft.
Add peppers, sautee until tender.
Add the mushrooms and garlic.
Sautee for an additional 3-5 minutes until tender and blended well.
Add slightly thawed spinach and cover for 3 minutes.
Add can of tomato paste, stirring and mixing it in to the veggies. Cover for 2 minutes.
Add A1 sauce and dried parsley
Add rehydrated TVP and stir well. Cover for additional 10-15 minutes, stirring occasionally.
serve with buns of your choice!
Yields: approximately 6-8 servings. For more servings, double or triple everything in the recipe.

NB. Morningstar Crumbles are *no longer* vegan, as they changed the recipe (the wrong way if you ask me). Boca Crumbles are still vegan I believe.
Worth checking regularly as these recipes seem to change without warning. - 1/19/10

Thank you! I just discovered this. I have altered my recipe and now make it with Bob's Red Mill TVP. Again, thanks for pointing this out, as I did not realize they had changed their recipe. Darn them!!!

My husband and I did not care for these sloppy joes. I think they would be better if you omit the A-1 and add ketchup/barbecue sauce. Just a thought. - 8/27/07

i'm sure it's tastey with bbq or ketchup...we just don't like them so much. A-1 is our family's favourite. Please experiment and have fun! Thanks for trying the recipe!

I had to change my rating from 2 stars to 4. I didn't like the recipe on the day that I made it because the spinach flavor was overpowering. BUT the second day, after the flavors mellowed and melded, it was outstanding! I now consider this confort food and will return to this recipe again & again. - 8/21/12

The texture was perfect, and I love how many veggies are in this, particularly the mushrooms. However, our entire family felt this was a bit bland. I will definitely try it again with some variation. Thanks! - 10/5/08

variation in spices is, well, the spice of life! we vary it all the time, and i strongly recommend it!
