1 pound of cod (cut into 4 oz pieces)3 cloves of garlic, minced1/2 TBS I Can't Believe It' s Not Butter1 TBS Olive OilJuice of 1 lemon2 TBS chopped flat leaf parsley
Preheat oven to 350 degrees F.
Place fish in a baking dish large enough to hold the fish in one layer. Season fish with a little sea salt and freshly ground black pepper.
Place margarine and olive oil in a small nonstick skillet and sauté the garlic on medium low heat for 1 minute. Add lemon and parsley. Drizzle mixture over top of fish. Bake until the fish flakes easily with a fork for about 12 to 14 minutes.
