Ingredients
2 cans black beans, rinsed & drained2 cups chicken broth 1 cup salsa
Directions
Heat all ingredients in large pot on stove until heated through.
Transfer to a blender or use an immersion blender to puree into a "creamy" black bean soup.
Garnish with fresh cilantro or other herbs.

    This is a good basic recipe. I like to add other things to spice it up and give it more of a healthy punch. I saute up about 1/2 c. each of onion, celery and carrots in a bit of butter. Then I add 1 tbsp of cumin. I blend it & add another can of beans to give it a few chunks. Serve w/ sour cream. - 2/2/11

    Swapped vegetable broth for chicken broth to align with my vegan life style. I'm a garlic lover so I added about a teaspoon of minced garlic and two tsp cumin. So good, and so quick to make. - 3/11/12

    This soup is awesome! I added a tsp. of cumin and it was delicious creamy goodness! I added fresh cilantro and fat free sour cream as toppings.I will be making this soup at least once a week. - 1/1/12

    I love this soup! I add cooked chicken and a little cilantro and dont blend it. I've also cooked it down some and used it as a dip. It's awesome no matter how we fix it!! - 1/12/11

    Loved it! I made it with dry black beans, and it took 30 minutes to cook them in pressure cooker (I used about 1.5 cups dry beans + 4 cups water + 1 chicken bouillon cube). After the beans were cooked, I added some chili pepper paste, the salsa and 2 cloves of garlic, then puréed in Cuisinart. YUM! - 9/1/10

    Awesome, used low sodium chicken broth which cut the sodium drastically. Topped with 2% Greek yogurt instead of sour cream and you wouldn't know the difference. Husband loved it and he is picky. Will keep it on the dinner rotation for sure. - 9/23/11

    Great recipe! I adapted the recipe: I added about a cup cut bell pepper and half the beans to the pot. I let the pot simmer for about 10 minutes then I pureed the mix in a blender, leaving it slightly chunky. I put the mix and rest of the beans into the pot to simmer 10 more minutes. Yum! - 9/9/12

    Make sure you check the nutrition information...different brands have a different amount of calories per serving of broth, beans, or salsa. I'd suggest doing a recipe makeover to check your ingredients. - 12/29/12

    Absolutetly fabulous. The cilantro is the key. A small dollop of PLAIN fat free greek yogurt gives a tang like sour cream but without all the calories. - 12/28/12
