Cod with Wine & Sun-Dried Tomatoes

Ingredients
1 lb (500g) cod fillets, cut into serving size pieces1 tbsp vegetable oil2 garlic cloves, chopped fine1/2 tsp (2ml) salt1/4 tsp (1ml) pepper1/2 tsp (2ml) thyme1/3 cup (75ml) white wine6 sundried tomatoes (packed in oil), cut into small pieces1 small lemon, sliced thin
Directions
Brush cod fillets with oil and sprinkle with garlic. Sprinkle with salt, pepper & thyme.
Place fillets in baking dish and add wine.
Top with sundried tomatoes and lemon slices.
Cover with foil and bake at 375 for 20 minutes or until fish flakes easily when tested with a fork.
Serve with vegetables!

    As others have said, I thought this was very bland. There aren't any ingredients that give it any pizazz. If I was to modify this, I would add more garlic and a sprinkle of paprika, cumin, red pepper flakes, chili powder, or some other similar spice/herb. - 4/9/12

    This was delicious! It seemed as if half a teaspoon of salt would be too much, so I used a quarter teaspoon. It was still too salty for us. I'll probably cut it to an eigth of a teaspoon or leave it out entirely. - 7/7/09
