Microwaved Sweet Potato Puffs

Ingredients
1 egg white1/4 cup of raw sweet potato1 teaspoon sugar1 teaspoon vanillacinnamon to taste
Directions
1. Gather all ingredients.

2. Puree all ingredients in blender until smooth.

3. Pure puree into a small microwave safe bowl or container and microwave on high for 2-3 minutes.

4. Allow puff to cool for 2 minutes. Garnish with fresh fruit, if desired.

* Puff will have a firm texture if microwaved longer.
