Beer Braised Mussels

Ingredients
2 tablespoons olive oil1 medium onion, finely chopped4 large garlic cloves, thinly sliced1 (12 oz) bottle lager beer, such as Samuel Adams4 pounds mussles, scrubbed1/2 cup chopped parsleyAccompaniment: hot crusty breadSeafood, European, Easy, One-Dish, 30 Minute, Quick, Low Carb, Low Cholesterol, Gluten Free, Healthy, Dairy Free, Main Dish, Dinner
Directions
A little Luther Vandross and a extra bottle of the beer (sippin while cookin)
Cook onion and garlic in oil in a 5- to 6-quart heavy pot over medium heat until fragrant and slightly softened, about 3 minutes. Add beer, ¼ teaspoon salt and ¼ teaspoon black pepper and bring to a boil.

Add mussels and cook, covered, over medium-high heat until most of mussels are opened, 6 to 8 minutes. (Discard any mussels which do not open after 8 minutes.) Stir in parsley and serve with crusty bread to sop up sauce.
This serves 4 people from a happy cook!
