Mexican Eggroll

Ingredients
6 wonton Wrappers1/2 cup canned yellow or white corn (drained)1/2 cup canned black beans (drained)8 tsp taco seasoning1/4 cup chopped onions (any kind)1 cup of tap water6 oz of chicken breast (cut into 1/2 inch pieces)6 sprays of cooking spray
Directions
Preheat oven to 400 degrees.
In medium saucepan over high heat, add first 7 ingredients and bring mixture to a boil.
Boil while stirring constantly for 10 minutes.
Lower heat to simmer, cover and cook for 20 minutes.
Drain liquid from mixture.
Lay out 6 wonton wrappers on counter and put about 2 tablespoons (1/6 of mixture) in the middle of each wrapper. Use cooking spray to help "seal" the wrapper.
*** You can add cheese at this time but it is not calculated in the nutritional information.***
Roll the wrapper by folding each end in first (just like a burrito) and place on cookie sheet.
Bake for 10 minutes.
Let roll cool for about 5 minutes before serving.
This is very good as an appetizer or as part of a main course and is delicious served with salsa and fat free sour cream, but can easily stand on its own.
You can substitute the chicken for extra lean pork tenderloin, lean steak, lean ground beef or veggie steak/chicken.
I use leftover meat for this dish all the time and the family goes bonkers over it.

    Had to laugh - this recipe says to mix the FIRST SEVEN ingredients and the wonton wrappers are the FIRST item on the recipe. I am a great cook and know NOT to throw them in with the other six ingredients!! Some people might follow the recipe and not even read it through. - 3/17/09

    Hi Aallconk! I have only found one size of Egg Roll wrappers at my stores. There are also won ton wrappers (which are much smaller). However, I live in Pennsylvania and we may not have as big of a selection they are about 5"x5" (I'm guessing since I don't have them in front of me). I hope this helps

    I have made a very similar version of this for years. I also add canned green chiles, a little bit of cheese, any type of left-over meat (pork roast is amazing). I don't boil anything together just place ingredients in the EGG-ROLL wrapper, fold and cook. My whole family loves them. - 6/7/11

    I had to tweek the recipe to speed up the process: I used canned chicken . and eggroll wrappers and then browned all sides w/oil, (wonton too small, and meant to be boiled). Also consider it for a taco using a corn tortill and avocado - 2/20/09

    I absolutely LOVE this recipe. I like things a little spicy so I subbed a can of Ro-tel for the cup of water, and used Southwest Chicken Strips by Tyson, and cut down on the Taco seasoning needed. But they were great!!! I then made a batch using lean ground beef, and green chilies instead of corn. - 4/1/08

    I used egg roll wrappers, wonton wrappers are too small to deal with. The photo has the larger wrappers, and they are deep fried. My oven baked didn't have the crispy little bubbles in the wrapper that would appear with hot oil. - 4/12/20

    This is a interesting recipe that I will be doing again. Next time I will be adding tomatos and spinich.

    It is quick and easy and something that as you make it, you can change the recipe up and make it your own.
