1 16 oz. can canned pure pumpkin2 eggs, large1/2 canola oil1 cup sugar3 cups skim milk1 cup water2 cups whole wheat pastry flour2 cups whole brown rice flour4 tsp. baking powder1 tsp sea salt1 tsp. nutmeg, ground2 tsp. cinnamon, ground2 tsp. ginger, ground
Combine liquid and dry ingredients separately. Lightly mix them together. Fill 24 greased muffin tins. Bake at 400 degrees for 15 minutes.
