FABULOUS! The best recipe I've tried from SP so far, hands down! My family loved it and said it I could make every week. I didn't have dried apricots on hand so made it with just the apricot preserves and it was fine. I served it with a tossed salad and brown rice. What an easy, tasty meal! - 8/27/08

Awesome taste! I fixed this for my best friend & I today while I was visitng. I have to agree that it's the best recipe I've tried yet that I found here on SparkRecipes! I'll be making this at home soon for my family & know it's going to be a major hit there, too! - 5/17/09

It is a fantastic recipe I've been making a few years now. My son and I watched Rachael Ray make it on her show while I was recovering from surgery and we tried it right away. It's a family favorite. - 4/28/09

I think this is a lot of calories. See the 8 servings for 344 calories in four chicken breasts. Most would eat one chicken breast, which would be 700 calories (without rice or anything else). - 4/28/10

Next time, pork loin, low-sugar orange marmalade, mandarine oranges or clementines, and chocolate vinegar - 4/28/10

Isn't this Rachel Ray's Recipe?! If you use low-sodium broth or even homemade, it cuts the sodium even more. Great with brown rice! - 6/17/09

As good as this is, I thought the amount of liquid was too watery and abundant to serve over rice. I added 10 more minutes of cooking time and boiled on med-low uncovered to evaporate some of the water but intensify and thicken to a sauce. FABULOUS!! Served over wild rice. - 6/20/09

Very good. Served it over CousCous, and with a side of steamed broccoli. Loved the change in the type of meal. - 6/11/09

This recipe was a hit in my family served with steamed broccoli and brown rice. I will make it again, but I will use less broth so that it will thicken a little more - 8/26/08

made this tonight for dinner, good , but not great! added a little ginger and garlic which helped, but needs something to give it a little kick! Next time I'll add a little hot sauce and less broth as there was a lot of liquid. will make again, but will play around with the ingredients . thanks - 4/30/10

This is such a great recipe. This is the second fruit with meat entree I have found on this site. I have been so missing salt and herbs are not my thing, I am learning to use them more. Eating fruit is really exciting. Pineapples with pork , Apricots and chicken. DH and I love these combos. - 4/28/10
