Spicy Shrimp and Pasta

Ingredients
1 Tbsp. olive oil3 onions, chopped6 garlic cloves, crushed1 can diced tomatoes1/4 cup dry red wine2 Tbsp. fresh oregano1/2 tsp crushed red pepper1/2 tsp salt1/4 tsp sugar1/4 tsp coarsely ground black pepper1 pound large shrimp, peeled and deveined3/4 pound whole wheat pasta (spaghetti or linguine)
Directions
1. Heat oil in large skillet, then add onions and garlic. Saute until golden, about 10 minutes. Add tomatoes, wine, oregano, crushed red pepper, salt, sugar, pepper; bring to a boil. Reduce heat and simmer, uncovered, until the flavors are blended and the sauce is slightly thickened, about 15 minutes.

2. Add shrimp to the sauce and simmer, uncovered, until the shrimp are just opaque, about 5 minutes.

3. Meantime, cook the pasta according to package directions; drain and place in large serving bowl. Toss at once with the sauce and sprinkle with fresh parsley.

Serving Size: 1 cup pasta and 1 cup shrimp and sauce
