Quinoa with Black Beans and Corn

Ingredients
1 teaspoon vegetable oil 1 onion, chopped 3 cloves garlic, peeled and chopped 3/4 cup uncooked quinoa 1 1/2 cups vegetable broth 1 teaspoon ground cumin 1/2 teaspoon cayenne pepper salt and pepper to taste 1 (15 ounce) can corn kernels 2 (15 ounce) cans black beans, rinsed and drained 1/2 cup chopped fresh cilantro1 teaspoon lime juice
Directions
1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
3. Stir corn and beans into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the cilantro and lime juice.
Serving Suggestions
Top with sour cream and serve as a main dish or side. Or fill the mixture inside a pita. Makes about three servings as a meal.

    This was fantastic. I reduces the beans and corn (which I cut fresh off two cobs because I had them) and added red belle pepper and recalulated ingredients to about 400 per serving for two servings. I forgot to add the lime juice, but will try that tomorrow for the second half. - 7/3/09

    I think cilantro tastes like nasty socks smell, so I refuse to include that, but the rest was good. I added a few drops of chipotle hot sauce - excellent! - 5/10/10

    I thought this was very tasty! I added chopped red pepper at the step where the corn and beans were added. I like to mix all together and refrigerate for a few hours before warming up to serve... seems to let the ingredients fuse into each other better. I will definitely make this again. - 4/30/09

    delicious!! made this today with red quinoa.... it was all they had at the store. used 1/2 chicken broth-1/2 water for the vegetable broth (didn't have any). added 1/2 jalapeno chopped and 1/4 cup of diced red onion at the end with the cilantro. loved this! thank you! - 4/11/10
