Chicken Gumbo

Ingredients
1 large onion, chopped3 stalks celery, chopped16 oz bag of sliced, frozen okra1 tbsp olive oil1 lb skinless chicken breast, cut into 1" cubes2 cans reduced sodium chicken broth2 tbsp cornstarch1/4 cup water1/4 - 1/2 tsp black pepper1/4 tsp ground cayenne pepperSalt to taste
Directions
Heat olive oil in a dutch oven. Add okra and cook till slightly browned for about 10 minutes.
Add chopped onions and celery. Cook stirring occasionally until soft.
Add stock and spices. Bring to a slight boil.
Add cut up chicken and simmer for another 15-20 minutes or until chicken is cooked.
Serve over brown rice.

    This recipe was very good, though a bit bland.

    I had to add a bit of Creole seasoning, garlic powder and Tabasco, which brought up the sodium...but not much.

    I made my own broth, added 1/8 - 1/4 cup chooped pimento and green pepper. Used my own salt substitute to lower the sodium even more. Served as suggested topped with sprig of fresh celery and with beets on the side. Delicious. - 4/11/08
