Turkey Muffins/Loaves

Ingredients

1 pound ground turkey 1 egg, beaten1 cup tomato sauce1/4 cup Italian bread crumbs1/4 cup freshly grated Parmesan cheese, plus additional for topping1/2 red pepper, chopped1 small onion, chopped1/2 packet of Good Seasons Italian dressing mix1 (heaping) teaspoon crushed red pepper flakessalt and pepper
Preheat oven to 400. Generously spray muffin pan with cooking spray.
Combine all ingredients in a large bowl and mix using hands until well blended. Using a large spoon, generously fill each muffin slot and sprinkle each muffin with additional Parmesan cheese.
Bake for 25 minutes or until a light crust has formed on each muffin.
(Makes 12 muffins)

I love these - although I would rather add a little less crushed red pepper. Love the addition of parmesan! I have overcooked them-still tastes great, but leaves a mess in the cupcake pan! Friend said she made them like big meatballs, and they kept their shape & no mess! DH loves this too! - 4/4/08

These are amazing! If they get to juicy as some of you had said just drain the juice off about 5 mins before they are done and they get nice and crispy. And don't be afarid to add the crushed red peppers it doesn't make them to hot at all! Leftovers? Slice them up for a yummy sandwich!!! - 7/25/09

Very good! Spicy! I omitted the freshly chopped red peppers. They do initially come out of the oven with lots of juices from the turkey, but this soaks back in - you could use less tomato sauce if this is bothersome. Even better reheated! Tasty all the way around, even picky hubby liked them! - 4/22/09

I may these tonight and thought they were delicious. I cut down a little on the tomato sauce and used some crushed red pepper/black pepper herb that I had. I thought at first there was a little too much fresh red pepper but changed my mind after 2nd one. HAHA Also used Parmasean/Ramano cheese. - 3/11/09

I made these into 6 servings and added paprika, garlic powder, and italian seasonings. I substituted mozzarella for parmesan and omitted the italian mix. Great flavor and portioning but next time I will use half the tomato sauce, they were a little too moist. Great recipe, will make again! - 5/23/09
