Mandarin Shrimp

Ingredients
1 pound fresh or frozen raw medium shrimp (in shells)2 cups boiling water2 cups sliced mushrooms (about 5 ounces)1 cup uncooked long grain brown rice1 small onion, thinly sliced1 tsp salt3/4 tsp ground ginger1 cup sliced water chestnuts1 can (15 oz) mandarin orange segments, drained1 package (6 oz) frozen snow peas, thawed and drained
Directions
Peel shrimp. (If shrimp are frozen, do not thaw; peel in cold water.)
Make a shallow cut lengthwise down the back of each shrimp; clean out vein.
Heat oven to 350 degrees.
Mix water, mushrooms, rice, onion, shrimp, salt and ginger in ungreased rectangular baking dish, 13x9x2 inches.
Cover tightly with aluminum foil.
Bake about 40 minutes or until liquid is absorbed and shrimp are pink.
Stir in remaining ingredients.
Cover and let stand until snow peas are hot.
Serving size about 1.5 cups each.

    The rice didn't cook in 40 minutes. Next time I will cook the rice first then put it all together. Very tasty! Also, I added soy sauce before serving. - 2/7/08
