Gluten free peanut butter truffle cookies

Ingredients

1 cup creamy peanut butter (I like all natural Skippy)1 cup brown sugar, firmly packed 1 large egg 1 teaspoon baking soda 1/2 cup semi-sweet chocolate chips
Preheat oven to 350.
Combine all ingredients except chips until well blended (seriously, my cookies still had some sugar graininess).
Add chips.
Drop slightly rounded teaspoonfulls on ungreased cookie sheets (12 to a sheet) - do not flatten.
Bake 10 minutes or until puffed and golden. Cool on wire rack for at least 5 minutes before removing from cookie sheet (they will be very soft).
Makes 24 - 30 cookies

I love this recipe. It's super easy and I often make it to bring to parties so I can have a GF treat. No one ever realizes there is no flour and everyone loves them. I use granulated sugar & don't get the grainy texture. Tip: use parchment paper so they don't get glued to the cookie sheet. - 1/16/09

The nutritional information is correct. The ingredients make 24 servings. That can be 24 average sized cookies, 12 hugs cookies and only eat half or 48 little cookes. Make them however big you want but remember 1/24 of the batter is a serving.

what holds the cookies together and prevents them from melting? Is their a wheat flour alternative that should be used? - 5/5/08

I am not sure what holds them together but no, there are no more ingredients. You can even make them simpler with 1 cup sugar, 1 cup peanut butter and 1 egg but I liked this recipe better.
