Slow Cooker Bacon & Cheese Potatoes

8 slices cooked turkey bacon5 medium potatoes (to total 8 cups chopped)1 cup reduced fat Mexican style four cheese blend1 medium onion, chopped2 Tbsp buttergreen onion (as much as you like)seasoning of your choicealuminum foil
Directions
Line crockpot with foil, leaving enough to cover the potatoes when finished.
Layer half each of the crumbled bacon, onions, potatoes and cheese in crockpot. Season to taste and dot with butter.
Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
Cover with remaining foil.
Cover and cook on low for 8-10 hours.
Serve topped with green onions.

You line the inside of your crockpot with foil, leaving enough sticking up to cover the potatoes while they are cooking. It helps to spray a little oil on the foil before you start putting your food in. The foil isn't really necessary, but makes clean up a whole lot easier than scrubbing! - 9/26/13

This is so good. I highly recommend this! The first time I made this, I was concerned about there not being enough liquid and some of the cheese (that was touching the sides) burned. But it was still so good! I just made it again and added 2 cups of chicken broth. It's a bit soupy but still so good! - 1/27/14
