Stir-Fry Vegetable with Shirataki Tofu Noodles

Ingredients
1 T sesame oil8 oz tofu shirataki noodles1 cup bamboo shoots1/2 cup shiitake mushrooms2 T Kikkoman soy sauce1 C stir-fry vegetables (frozen)
Directions
Combine oil and soy sauce in wok and preheat over medium heat.
Prepare shirataki noodles per package directions.
Add noodles and frozen vegetables to wok; stir fry until mixture is heated through but vegetables are still crispy.
Add bamboo shoots and shiitake mushrooms; heat through.
Makes 2 servings of about 2 1/2 cups. Simple, quick, delicious and deceptively low in calories!

    Wow, I just made this for dinner and it was AMAZING. I used reduced sodium soy sauce and thanks to one poster's suggestion, I made my own peanut sauce with natural peanut butter and peanuts. I also added cabbage and bean sprouts. Never tried Shirataki noodles before, but LOVE them! Thanks! - 8/25/08

    I love shirataki noodles as a substitute for pasta but didn't like the odor at first. Once I followed the package directions and rinsed them very thoroughly several times before parboiling for 3 minutes the odor issue was resolved. It's a very important step! - 2/28/10

    I have found that the tofu shirataki noodles are always hit and miss with people - if you're interested in the noodles but they're a little weird for you, try a slightly creamier sauce - like mix some low fat sour cream with one wedge of light laughing cow cheese - helps make it "noodlier"! - 1/10/09
