Low GI, Gluten Free, Sugar Free Waffles!

Ingredients
2 Eggs1/2 cup Cottage Cheese1/2 cup Steel Cut Oats1 cup Frozen Blueberries
Directions
*Makes 1 Serving=2 Large Waffles

1. Preheat waffle iron and spray with nonstick cooking spray.
2. Combine eggs, cottage cheese, and oats in blender until smooth.
3. Meanwhile, rinse and drain frozen blueberries in warm water.
4. Transfer berries to bowl.
5. Pour mixture over berries.
6. Fold berries into batter.
7. Spoon half of batter onto waffle iron.

*Try other fruits, such as raspberries, apple, peaches, pair, etc.

*If you love the recipe, make batches on the weekends and store them in the freezer for a quick breakfast on the go!

    I did try, I think I will try it with oat flour next time, and blending most of the fruit in with the other ingredients, and finding some gluten free ricotta - 1/10/10

    I had to through this out. The batter was more like egg-fried fruit than a batter consistancy. I perservered and managed to cook 2 kind of eddible waffles. Taste was pretty good, but the oats weren't cooked. Deeply disappointed. - 8/25/08

    This sounds great! I've been doing something similar with egg whites and oatmeal to make pancakes, but adding the cottage cheese is a great idea! - 7/12/08
