Beef Stew with Barley

Ingredients
1 1/2 lb Beef, cubed and all fat trimmed. (Get whatever is the most lean at your market)3 medium potatoes washed and cubed (skin on)2 large carrots cut1/2 large onion cubed1 cup cooked barley1 tsp olive oil1 large clove garlic4 cups vegitable stock3/4 cup red winebaley leaf
Directions
Boil carrots and potatoes until just tender. In large pot heat oil and add onion and garlic and cook until starting to turn translucent - add beef and brown. Once meat is browning and onions soft, add wine, baley leaf and pepper to taste and let cook with meat for about 2 minutes. Add stock, carrots, potatoes and barley and let cook for 30 - 45 minutes. Thicken with corn starch if desired. Makes 5 - 2 cup servings
