2 cups celery diced1 large onion diced5 cloves garlic, dicedyellow and red peppers, dicedolive oilfishshrimpwaterbrown ricesalt, pepper and other seasonings as desired
add diced vegetables to pot with small amount of olive oil. saute briefly. Add 1 can diced tomatoes; 1 can tomatoes with chili (rotel). Add can of corn. Rinse all cans and add full cans of water to pot. Add additional water to pot as needed. Add shrimp and fish. If shrimp and fish are large, cut into bite-sized pieces. Add two cups brown rice or barley. Cook until done. Season with salt and pepper to taste.
