Mash banana in a bowl
add eggs and mix well
mix in cinnamon
spray pan with nonstick spray and heat to med
Scoop batter onto warm pan
cook like a pancake, flipping halfway through once it solidifies a bit

This is a great recipe. No cooking spray was needed with my non stick omelet pan. I found the pancakes had a tendency to tear if more than 3" wide. Flavor was good and tasty. The banana was definitely more prominent than with a traditional flour pancake. Texture was similar to a thick crepe. - 1/22/14

This is a good base recipe but I think it tastes a little bit better with the addition of some vanilla and some nutmeg. They are more like a crepe consistency than pancakes but that's ok. I also ended up cooking mine on low which cut down on them breaking up so much. :D Super easy to make though! - 8/26/17

thanks for the comment. I've since come up with better alternatives to pancakes in both texture and nutrition. These taste fine, but they have the consistency of an omelette. I'd be more than happy to share if you wanted.
