Coconut-Cilantro Rice with Lime

Ingredients
1 cup jasmine rice 2 tablespoons unsweetened shredded coconut2 tablespoons light coconut milkjuice and zest of 1 lime2 tablespoons chopped fresh cilantro
Directions
Prepare jasmine rice according to package directions.
Place the cooked rice in a medium bowl.
Stir in the shredded coconut, coconut milk, lime zest, and lime juice. Sprinkle the cilantro on top.

    For the comments below: If 1/2 cup is a serving and it makes four servings, then 2 cups cooked rice is the result. Therefore, you would use one cup of uncooked rice. Therefore, feel free to use whatever Jasmine rice suits you. I will pair with a spicy main dish as a "cooling" side. - 2/25/13

    Tasty but I think this twist from my local authentic Mexican place is better. Insead of water, cook the rice in low sodium chicken broth. But before cooking the rice, Quadruple the cilantro, put the broth and cilalntro into a blender to purify the cilantro,then cook the rice in that. Yum! - 2/25/13

    I used a 7 grain blend and it was outstanding! PLEASE, don't feel that every recipe needs to be followed EXACTLY to the tee. If you don't care to use the name brand mentioned, appreciate the recipe for the guideline that it provides for so many other options. Use your imagination and tastebuds! - 2/25/13

    Odd.. I left my comment yesterday to try it today & rate and it vanished. Well, the recipe was delicious! I didn't use the brand name rice, only generic, left out the shredded coconut and added some garlic & onion. Nice and fluffy with lots of flavor. - 2/26/13

    not rating as i have not tried the recipe yet but i do have a question. I noticed that many of the recipes on this site use white rice or various versions of white rice. How come there is not more promotion of the brown or healthier versions of rice?
