adzuki bean chili

2 cups dry adzuki beans2 large onions sliced4 cloves garlic minced4 medium carrots diced1 red pepper diced1 cup basmati rice1 large can diced tomatoes2 T vegetable oil1/2 t cinnamon1-2 T salt1 T black pepper2 T cuminand if you have them:1/2 t paprika2 T corianer1/2 t turmeric
Soak beans in warm water for at least 4 hours. Remove old water, rinse beans and put beans in pot with 5 cups clean water. Boil 40 minutes, add 2T salt and boil 15 minutes til soft. Drain.
Prepare rice as directed
Heat oil. Add spices and stir. Add onions, carrots, red pepper. Add adzuki beans and tomatoes. Fill tomatoe container with water and add. Stir, cover and simmer 10minutes. add rice and stir well. simmer 5 minutes. leave covered to soak up water.
Serving Size: put in 15 equal sized tupperware containers
