Yellow Curry - Thai Fresh

Ingredients
1 can (mae sri brand) yellow curry paste2 cans of 13.5 oz coconut milk (do not shake)1-1/2 lbs chicken, beef or pork2 potatoes peeled, chopped into big cubes2 big onions, chopped into big piecesfish sauce, 3-4 tbspsugar to taste, 2 tspbeef stock (opt)
Directions
Do not shake the cans of coconut milk, scoop out the top creamy part of both cans. Heat coconut cream and bring to a boil. You may see some oil crack on top. Stir in curry paste and turn down heat. Simmer until fragrant and coconut cream starts to crack more oil or have oil float on top. Add the rest of the coconut milk, add beef stock if using, bring to boil.

Add choice of meat. Cook meat on med-low heat for 15 min. Add in potatoes and cook for 5 min. Add onion and cook for another 10 min. Add fish sauce and a pinch of sugar.

Bring it to your own preferred taste. Serve over rice.

If you like a little runnier add little water or more coconut milk.
