Corned Beef and Cabbage

Ingredients
2 lbs low-sodium corned beef brisket1/2 head of cabbage, cut into large pieces1 medium onion, cut into large pieces3 medium potatoes, cut into large pieces1 tbsp pepper1/2 tsp salt6 cups waterI add the salt because the low sodium brisket is so substantially lower in sodium than the full brisket, that a 1/2 tsp of salt adds the flavor with substantially less sodium.
Directions
Put all ingredients except corned beef in a crock pot.
Place corned beef on top of other ingredients.
Turn crock pot on low and let cook for 6 - 8 hours.

Makes 8 - 10 servings

    adding the salt defeats the purpose of low-sodium brisket. the onions and pepper add the flavor without the sodium. also, i would not add the cabbage until the last hour of cooking, the cabbage would end up being too soft for my taste! - 12/17/08

    I make this all the time it is easy and very good. I do not add the extra salt and add a med size turnip cut up. I also put in the cabbage in wedges on the top of the cabbage so it is the last to cook when left in the crock all day. - 12/13/09

    I always boil the cabbage separately and just until tender to avoid that cabbage smell in the kitchen. You can also add some carrots to the crockpot. - 6/15/09
