Leo's Monday Morning Pancakes

Ingredients
2 cups whole wheat flour2.5 tsp baking powder2 tbsp sugar2 eggs1tsp vanilla extract1 tsp veg. oil4 cups skim milk
Directions
Sift together flour, baking powder and sugar. Make a well in the center. In a seperate bowl beat eggs, vanilla and oil together, pour into the well. Add milk. Mix together until smooth. Pour onto hot griddle/non-stick skillet. Cook until bubbles form on top then flip cakes over, continue to cook until golden brown on bottom. Recipe should make 8 cakes.
