Roasted Peas with Sesame Dipping Sauce

1/2 lb sugar snap peas, ends trimmed1/2 Tbsp olive oilsalt & pepper, to taste1 Tbsp sesame seeds1 Tbsp apple cider vinegar2 tsp lite soy sauce1 tsp sesame oil1 tsp sugar free maple syrup1/4 tsp cayenne pepper
1. In a medium bowl, combine the apple cider vinegar, soy sauce, sesame oil, maple syrup and cayenne pepper and whisk until fully combined. Refrigerate until ready to use.
2. Preheat your oven to 450 degrees.
3. Place peas in a large bowl and toss with the oil. Transfer to a large baking sheet and sprinkle lightly with salt & pepper.
4. Bake 6 minutes, flip once, and return to oven for an additional 4 minutes. Remove from oven, sprinkle with sesame seeds and serve immediately with the dipping sauce.
