Roasted Red Potato Casserole

Ingredients
2 lbs. small red potatoes, quartered1/2 Cup Light Ranch1/2 Cup 2% Cheddar Cheese1/4 Cup Oscar Mayer Bacon Pieces1 Ybsp Parsley
Directions
Turn Oven to 350.
Put Potatoes in large bowl. Add ranch, bacon and cheese and stir till evenly mixed together
Spread in a 9x13 dish and cover with foil.
Bake in oven for 40 minutes.
Remove foil and bake an additional 15 minutes or until potatoes are tender.
Sprinkle with parsley and serve.
2/3 cup per serving.

    I made this today for me and my sister since we have a mutual weakness for ranch-y potatoes. It turned out well, although the cheese would've fared better if I had put it on top instead of mixing it in. Will make it again soon! - 10/17/09

    very good and easy just takes a long ime to bake. I added more cheese about 15 minutes before it was done cooking so some of the cheese was still creamy. - 1/29/09

    This makes a huge amount. I used russet potatos and Lithouse Light Ceasar dressing because I had no ranch. It was very good. It takes well over an hour to cook. I sprayed Pam on the potatos about 15 minutes before they were done and they browned up nicely. Very good and a nice change - 1/21/09

    This is good, but it did take 1 1/2 hours to cook - our dinner was delayed a long time.. I would probably try precooking the potatoes - steaming or ? before putting in oven the next time. The nut stats are nice, though. - 2/1/19
