Ingredients
1 head of Cauliflower1 cup low sodium Chicken Broth4 oz. Cream Cheese, 1/3 less fat2 Tbsp. Light Butter1 tsp garlic powder1 tsp parsley1/2 Cup 2% Shredded CheeseSalt & Pepper to taste.
Directions
Preheat oven at 350.
Break apart head of cauliflowe and steam in pan with 1 cup of chicken broth until cauliflower is soft.
Drain broth and put cauliflower on paper towels to dry off the extra moisture.
Mix with a hand or standing mixer the cauliflower, cream cheese, butter, parsley, garlic powder and salt and pepper.
Pour in a small casserole dish.
Top with shredded cheese.
Bake for 15 minutes.

    Second time around, I tried this with simply mixing the steamed cauliflower with Light "Herb & Garlic" Cream Cheese (and nothing else). Oh my goodness!!! So easy and SOOOOOO good!!! You could use any flavor cream cheese, and I'm sure this would be delicious. This is one of my fav recipes! - 1/12/09

    Delish! I used a 15 oz. bag of frozen cauliflower steamed in the microwave with 1/4 c. water and a dash of chicken boullion. Also added 2 T. of skim milk and a couple sliced green onions. Next time will cook the cauli longer--it didn't mix up too smoothly... but it tasted fantastic! - 2/18/08

    I LOVE this recipe. I dont think you should approach the recipe as replicating the taste of a potato. You will probably be disappointed. If you approach the recipe as a healthy alternative, then I think you will be pleasantly suprised. - 1/25/09

    I made mashed cauliflower for the first time and it turned out great! I told my kids it was potato casserole and they ate it with no complaints :) I used 3T fat free herb cream cheese but no butter. It was topped with 2T parmesan and 60g sharp cheddar. I will be adding this to my recipe rotation. - 5/20/12

    I've made these so many times since I saw this receipt.....I love it!! Best recipe so far! I used 2 bags of the frozen cauliflower instead of 1 head and kept everthing the same. I also did not bake it after the first time I made it. I just blended the cheese into the mixture and it was delicious! - 9/26/12

    These were SO DELISH!!! They will never take the place of mashed potatoes, sorry folks. But they're really tasty...I bet kids would love them. I made the recipe with fat free cream cheese instead of 1/3 less fat as the recipe states and it turned out great. - 3/30/09

    Very tasty! I roasted the cauliflower (instead of boiling in broth) and added some roasted garlic to the mix to add a bit of sweet flavor...because who doesn't love roasted garlic mashed potatoes? Very quick to do a one serving size in the toaster over. Mahalo! - 4/6/13

    I added just a bit of garlic and onion herb powder and man, was it good. My 2 and 3 year old grandkidlets LOVED it....so that's saying something. Will make this again and often! - 12/20/08

    I think this is fantastic. The more I replace potatoes with cauliflower,the more I love cauliflower. This was no exception. Maybe some onion next time, but that's it. For you meat eaters, browning pork chops and adding them to the top before baking makes a killer faux-potato cassserole. - 7/10/13

    FINALLY.....I've found a way to eat Cauliflower! I have never cared for it and don't eat it. This recipe was delicious. It has such a unique flavor and so creamy. While the rest of the family didn't care for it, that's ok because I have lots of leftovers. Very good! - 1/8/12

    This is some seriously good stuff! It's not even out of the oven yet and I've licked the blender clean. I'm so excited to try different seasonings and cream cheeses. Mine looks to be a tad bit too thin. I think this is because I had a really small head of cauliflower. Def a keeper for me! - 2/3/10

    Ah, this is a New Version of my Cauli-taters Deluxe- a Low Carb Option for Stuffed Potatoes! Never tried adding Chicken stock to it. Instead use all the usual additons-bacon bits or ham. - 6/14/09
