Ingredients
1 scoop vanilla whey protein (I use Jay Robb.)1/4 cup 100% pumpkin puree (NOT pie filling!)1/8 cup Splenda granular1 dash salt (I use Morton's Lite Salt)pumpkin pie spice, to taste1 cup soy milk (I use 8th Continent Light Vanilla.)2 tablespoons Fat Free Cool Whip4-5 ice cubes, if desired.
Directions
Put all ingredients into a blender and blend until smooth. This tastes like real pumpkin pie.


This is often cool and creamy enough for me without adding ice, but if you like ice... or for a larger and longer lasting shake... go for it!


After blending, add a little Smucker's SF caramel topping. Alternatively, add a dash of SF syrup, such as Monin Caramel, or another tablespoon of Cool Whip.


If you're feeling brave, add a tsp of instant coffee granules prior to blending.

Enjoy this at any time of the day. I prefer breakfast. Hard to get veggies in at breakfast!

    Soo good! I will definitely make this again. Pumpkin was a great idea. Such a good flavor, and good for you too. My only alterations were omitting the cool whip and pumpkin pie spice, because I didn't have them. I just used a dash of cinnamon. I prefer lots of ice too. - 4/20/08

    I LOVE this recipe!! I added the butterscotch topping, but next time will go with the sugar free as recommended. (TOO many extra calories) I used chocolate protein powder, and it was AWESOME!! I will be trying it with vanilla too! Thank you so much, I love pumpkin recipes!!! - 4/13/08
