Chicken & Wild Rice Casserole

Ingredients
1 lb boneless, skinless chicken breasts, chopped1 6 oz pkg long-grain wild rice1 can 98% fat-free cream of mushroom soup1/3 c skim milk1/4 c onion, chopped2 1/4 boiling water
Directions
Mix all ingredients in a 9x13 pan. Cover tightly. Bake at 350 degrees for 50 minutes or until rice is tender and chicken is cooked. Uncover and bake 10-15 minutes longer.

    This was soooo good! I put the onion with the chicken when I cooked it. Then I cooked the rice in the boiling water for about 5 minutes, added soup and milk and mixed it all together. In oven for about 20 min. and it was awesome! Thanks for a GREAT recipe! - 5/12/09

    I used Uncle Ben's Quick Cook Long Grain Wild Rice and cooked at for 30 minutes at 400 degrees. Also, to get some veggies in, I added spinach and sliced mushrooms that I had sauteed with the chicken in a little bit of olive oil. It was very good! - 2/19/10

    This meal was very easy to prepare. Since my boyfriend loves to eat, I shredded the chicken so it would seem like he's eating more meat than he really was. This recipe would've been creamier if I had added 2 cans of mushroom soup but still very tasty! - 5/2/08

    Delicious! I buy bone-in, skin on chicken breasts on when they are on sale. I'll cook a bunch then debone them and cut up the meat for the freezer. This recipe puts that chicken to great use!

    Me & my boyfriend both loved this. He dosent need to lose weight at all so I added a little bit of mozarella cheese to his plate and he thought it was a great addition. I ommited the onion (hate onions lol) & cooked Peas on the side and added them to my individual plate- the pea's made it sooo good! - 6/15/10
