Simply Spicy's Chana Masala

---Spice Blend---2 tsp coriander 1 tsp cumin1 tsp peppercorns1 cinnamon stick 2 whole cloves---Curry---2 bay leaves1 onion, chopped 1 tsp minced garlic 1 tsp grated ginger1/2 tsp cayenne 1/4 tsp turmeric 1/2 tsp garam masala 3 peeled tomatoes, chopped19 oz. cooked chickpeas, drained and rinsed1 tsp lime juice
For the spice blend, roast all ingredients in a dry frypan. Remove to a grinder and process until fine. Set aside.
Heat water in a heavy bottomed pan.
Add bay leaves, and stir.
Cook for 2 minutes.
Add onion, saute (adding water as required) until golden brown in colour.
Add garlic and ginger, cook, stirring, 2 - 3 minutes.
Add cayenne, turmeric powder, garam masala and spice mix and fry for a minute. Add tomatoes, cook 5 minutes.
Add the chickpeas, cover and cook 5-10 minutes on low.
Add water as required.
Remove from heat.
Add lime juice, then salt to taste.
