Linda's Curry Breakfast fry-up

3 cup diced Potato, raw 1/2 medium (2-1/2" diameter) Onions, raw, chopped 1 + 1/2 cup, chopped small or diced Broccoli, fresh 1/3 cup, diced Green Peppers (bell peppers) 1 clove Garlic, minced 2 tbsp Canola Oil 3 large Egg, fresh, whole, raw, whisked2 tsp Curry powder *or to taste1 dash Salt 1 dash Pepper, black 1 oz water to aid in cooking.
Heat the skillet, and add the oil. When skillet is hot, add the onion, and stir it until it starts to get translucent. Add the potatoes and garlic. Stirring occasionally, let the potatoes cook until they turn soft and start to brown.
Add the broccoli and green pepper. Add a couple spoonfuls of water, cover and let cook until the broccoli is tender.
Add the curry powder, salt and pepper to the whisked egg, and stir.
Add the egg mixture to the vegetables in the pan, and let sit for a minute to let it start to cook. Turn everything a few times to break up the egg, and cook until the egg is completely done (depending on how well you like your egg cooked).
