Light n Fluffy Banana Muffins

2 cups self-raising flour1 teaspoon bi-carb soda60g light brown sugar60g canola spread100g diet vanilla yoghurt1/2 cup skim milk1 large egg, beaten1/3 cup honeyjuice of 2 lemons1 small banana,mashed
Preheat oven to 200C. Spray muffin trays with cooking spray.
Sift flour and bi-carb into a bowl. Add sugar and stir.
In a saucepan melt canola spread and take off heat. Cool slightly. Mix in remaining ingredients with a whisk or fork.
Fold gently into flour mixture. Mixture will 'fluff up' When just combined put into muffin trays.
Cook for 15 minutes or until cooked.
Makes 12 muffins
-Mixture can be doubled to make 12 large muffins and 16 mini muffins.
