low fat zucchini coconut pineapple muffins

Ingredients
4.5 c whole wheat flour2.5 c splenda1 tbsp baking powder1 tbsp baking sodadash of salt 1 tbsp Ground Cinnamon.5 Tbsp Ground all spice1/2 cup of Unsweetened Coaco2 cups Unsweetened apple sauce1/2 cup canola oil6 eggs3.5 c shredded zucchini2.5 cups crushed pineapple w/out juice1 cup shredded sweetened coconut3 tsp vanilla extract
Directions
combine all dry ing. in one bowl
combine all wet in another bowl
gently fold wet ing into dry just until all blended
spoon into greased muffin pan 2/3 full
bake on 325 for 20-25 min done when toothpick comes out clean.

Cool on rack
