Broccoli Raisin Salad

Ingredients
4 cups chopped brocoli1/2 cup chopped onion (white, yellow or purple)1/2 oz or individual box of raisins1/4 cup chopped walnuts1 oz. sunflower seed kernels2 slices cooked, chopped turkey bacon3/4 cup Miracle Whip Light (20 cal./Tbsp)1/4 cup cider vinegar1 Tbsp. granulated sugarsaltpepper
Directions
Clean and chop one or two bunches of brocoli to make about 4 cups, and place in large bowl. Add chopped onion, walnuts, raisins, bacon, and sunflower seeds (the kernels, not whole seeds).

In a separate bowl, mix Miracle Whip, vinegar, sugar, and dash of salt and pepper. When blended, pour over brocoli mixture.

The salad can be served right away, but it's best if it sits in the refrigerator for several hours, or overnight.

    I've made it twice now. I prefer lowfat mayo, but that is a personal choice. I also used packaged crumbled bacon, just as a time saver. My kids like it too, so it's a keeper. - 6/7/10
