Beth's Fresh Basil Pesto

Ingredients
2 packed cups fresh basil leaves 1/2 cup freshly grated Parmesan1/2 cup extra virgin olive oil1/3 cup pine nuts4 cloves garlic, mincedpinch of salt1/8 tsp freshly ground black pepper
Directions
Combine basil and pine nuts in the food processor, pulse several times. Add garlic and pulse a couple more times.
Add the olive oil in a steady stream while the food processor is running. Scrape down the sides, add the cheese, salt and pepper and process until smooth and blended.
Serve over hot pasta, or spread on toasted baguette slices. Makes approximatly 1 cup.

    Perfect! My Mom used the same ingredients used in this recipe, but she is no longer here to tell me how much of each. I tried this and it tasted just like hers!     If you freeze this put it into ice trays which are the perfect serving size. Then you can pop them out put into a baggy and pull them out as you need. To lower your sodium use Nu-salt. - 8/2/10
